approx. 10 servings
ingredients (almost all of them) organic
1 happy chicken quatered
5 carrots peeled and cut into small pieces
5 parsnips peeled and cut into small pieces
1/2 knob celery peeled
1 bunch of parsley finely sliced
1 bunch of young onions finely chipped
3 limes quatered
3 bay leaves
3 p.of lemon grass
1 p. of ginger thumb-sized
2 tbsp.stripped off lemon thyme
3 tbsp.olive oil
salt
pepper
Put chicken parts into a pot with olive oil and roast on all sides,
infuse 4l of water and simmer for 1/2 hour, then add all vegetables and herbes, season with salt and pepper and simmer again for 1/2 hour.
Then take out the chicken parts, remove skin and bones, cut chicken meat into
small pieces and put it back to the soup.
Remove lemongrass, limes and lemon thyme leaves before serving.

This soup will make you strong and happy all around!
During 8 years, I`ve served this soup in different variations
to my colleagues at an advertising agency, also as a birth soup to my friend
Eva, who got it for refreshment right at the hospital, after her sons birth.
The soup is also good for health, while having an influenza infect or on
stressful times. Again and again, I was told, about the tonically effects
of the soup and that it causes a certain feeling of happiness.
The real cause could be the zinc, contained in chicken meat, which forces
endorphin production.
