ingredients:
oxtail, bacon, rootage, onion, red wine, salt, peppercorns, bay leaf, thyme, cloves

cooking:
Cut the bacon into dices and roast until brown. Cut onion and rootage, add them to the bacon and roast for a while. Rinse the oxtail cut it into pieces (each vertebra a piece)add it to the roasted mixture and infuse water. Then add the spices and simmer until the meat is done (3h around)- it should be easily removable by hand. Now take out the tail pieces, remove the meat from the bones, put the meat into the sieved soup, season to taste with wine and spices, bring it to a short boil again.
