200gms large flat mushrooms
30 gms butter
1 large finely chopped onion
1 tablespoon wholemeal flour
1 tablespoon tomato puree
500 ml stock
330ml brown beer
1 bay leaf
2 tablespoons chopped parsley

Finely chop mushrooms and stir, with onion, into melted butter on a large pan. Sweat on a low heat for 15-20 minutes then stir flour into mixture and cook for 1 minute. Add the rest of the ingredients bring to the boil and simmer for about 20 minutes. Remove bay leaf and serve.
