2 finely chopped onions
4 cooked mashed potatoes
30 gms butter
1 litre stock
2 bay leafs
Salt and ground black pepper to taste
1 tablespoon parmesan cheese
150 ml sweet sherry
Gently fry onion in butter until golden brown (about 15 minutes) mix the mashed potatoes and add the stock mixing all the time. Season with pepper and salt add the bay leafs and bring to the boil and simmer for about 15 minutes. Remove bay leafs add cheese and sherry, bring to boil again and serve.
