ingredients: 2tbsp olive oil, 1 chopped onion, 800g carrots roughly chopped, 1 bay leaf, 1tsp ground coriander seeds, cumin and cayenne pepper, 2tsp paprika spice, 1,25l chicken stock, salt, pepper, 250g set yoghurt, 2tbsp freshly chopped coriander leaves, fresh coriander leaves for the topping

preparation:
heat olive oil in a big saucepan, add onions and carrots and roast it on very low heat for 30 min.
add bay leaf and other spices, continue to simmer for 2 minutes. pour in stock, reboil, then reduce heat and simmer the soup in the uncovered pan for about 40min until the carrots are tender. allow to cool, put it in the blender in batches to puree, remove to the pan and reheat slightly. season with salt and pepper.
mix yoghurt with fresh coriander. put the soup portions in soup bowls, add some yoghurt-mix and serve topped with coriander leaves.
