pumpkin (hokkaido)
stock cubes
nutmeg
salt, pepper
roasted,grated pumpkin seeds + pumpkin seed oil
cream
white bread

Cut the pitted but unpeeled pumpkin into rough dices.
Bring water, pumpkin and stock cubes to a boil.
Season with nutmeg, salt + pepper, let the soup cool a bit and puree.
Mix the cream to a stiff consistency, bring the soup to a short boil again.
Top the soup with a blob of cream, some pumpkin seed oil, grated pumpkin seeds and serve it together with white bread.

This soup cooked by Evi has been refined by Paul with grappa and caraway.
