2 carrots
1tbsp oil
800ml vegetable broth
2 middle-sized beetroots cooked and peeled
1/2 tsp pepper
parsley, chopped

Sweat finely diced onions and carrots in oil. Then pour in the vegetable broth. Cut beetroots into dices and add it together with the red cooking water + pepper to the soup. Let simmer for 5 minutes, then add the chopped parsley.

Good tasting soup additiones are ravioli filled with zucchini, goat cheese and walnuts!
( at the farmers market I mistaked a pumpkin for a zucchini - it looked quiet similar - used the pumpkin for cooking, that was also delicious!)
