(Graukas = alpine skimmed milk cheese)

Ingredients:

2 onions
flour
half a litre white wine
2l vegetable soup
400g graukas
half a litre cream
salt, pepper, nutmeg
chives

Sweat finely sliced onions with oil, sprinkle with flour, infuse
white wine and vegetable soup and bring to a boil.
Crumble cheese into the soup, continue boiling until cheese
is melted, add cream, season with spices bring to a short boil
again and enjoy your meal.
P.s.: top the soup with dices of two pears (still firm), shortly
sweated in white wine and bestrew with chives.
